Per my sweet husband, he said I needed a new recipe... we'll here you go :-)
Fluffy Squash Souffle
2 lbs small yellow squash (zucchini works too)
1 tsp chopped onion
1/2 tsp salt
2 eggs, beaten
1/4 lb. cheese
1/2 c. cracker crumbs
2 tbsp butter
Paprika
Pepper
Cook squash until soft, cool. Add beaten eggs and mix, breaking up squash.
In a souffle dish, layer 2 times: Squash, cheese, breadcrumbs.
Bake at 350 degress for 20 min. Yummy!
